I'm looking for an easy-to-use tool with which to develop forecasts to complete test execution based on both the number of test cases as well as projections for additional iterations based on number of defects etc. Does anyone have one or know of one? Thanks!

I don't know of a commercial tool, I would probably suggest building something out of excel. I'd be happy to work on this wit you and you know how to find me.
Troy Magennis of Focused Objective ( http://focusedobjective.com/ ) probably has the closest thing to a commercial available tool for this.
